I grew up in the Pacific Northwest and it is one of my favorite places to visit. The food is incredible and the area is stunning with its rivers, mountains and endless green trees. When the New York Times published an article recently about how non-French chefs are reinvigorating Paris’ dining scene, they conveniently left out Septime, a Parisian owned neo-bistro that really pulls together all that is exciting and good about eating right now in the city of light. Bertrand Grébaut and his business partner Théo Pourriat opened Septime in 2011 and, since then, it has become one of the most sought after reservations in the city.
